My uber-relaxed, beer drinking, friend Matt is the essence of our Smoked Balsamic Vinegar. Matt will start smoking meat as early as 6am, with a beer in his hand and his smoking cap on. He will literally sit next to the smoker for the next 6-10 hours, as his meat is prepared. That is dedication. And when the meat comes out, let me tell you, it melts in your mouth. As for me, I’'ll show up to this cook out with a bottle of Smoked Balsamic Vinegar and meet Matt’s wife on the porch for a crisp summer cocktail while we wait. If you don’t have 6-10 hours to wait for your meat to smoke (like me!), drizzling this on top grilled flank steak will do just the trick!
